Garlic Lime Sweet Potato Fries
2-4 servings
Ingredients
- 2 large sweet potatoes – white or
- orange
- 5 – 6 garlic cloves, minced
- 2 tbsp lime zest (2 limes)
- 3 tbsp olive or avocado oil
- 1 1⁄2 tsp sea salt 1 tbsp lime juice
- Fresh cracked pepper to taste
- Fresh parsley for garnish after cooking
Instructions
- Preheat oven to 350 degrees.
- Cut the sweet potato into medium size wedges or stripe.
- Toss them in a sheet pan with oil or seasonings. Spread the fries out evenly on the sheet pan.
- Bake on 350 degrees for 20 minutes then rotate the fries. Cook for another 30 – 40 minutes or cook until crisp. Cooking times may vary.
Honey Balsamic Chicken & Veggies

Ingredients
- 6 small chicken breasts
- 1/3 cup balsamic vinegar
- 1/4 cup honey
- 1 1/2 Tbsp dijon mustard
- 1 tsp garlic powder
- 1/2 tsp turmeric ((optional))
- 1 tsp paprika
- salt/pepper
- fresh basil ((optional))
- veggies of choice
Instructions
- Mix all of the ingredients together with the exception of the chicken breasts and veggies.
- Place the sauce in a freezer bag and add the chicken breasts.
- Refrigerate overnight (or at least 30 minutes before).
- Preheat oven to 350 degrees.
- Line a baking sheet with foil or parchment paper.
- Add the chicken breasts to the baking sheet.
- Cut the veggies and add to the sheet pan.
- Drizzle the extra sauce over the chicken and veggies.
- Bake for about 30 minutes (or until the chicken is fully cooked).
- Serve and enjoy, pack up for lunch the next day, or freeze for later!
Notes
Tip: When working with turmeric, it’s best to wash dishes right after using them so that they won’t stain!
10-Minute Avocado Pasta Sauce

Ingredients
- 1 large avocado
- 1/2 cup spinach leaves
- 1/4 cup olive oil
- 1/4 cup unsweetened cashew milk
- 2 tsp dried basil
- 1 tsp garlic powder
- salt/pepper (to taste)
Instructions
- Peel and remove the seed from the avocado.
- Place all of the ingredients in a blender or food processor and blend until smooth.
- Pour the avocado pasta sauce over your choice of pasta.
- Serve and enjoy!
