Garlic Lime Sweet Potato Fries

2-4 servings

Ingredients

  • 2 large sweet potatoes – white or
  • orange
  • 5 – 6 garlic cloves, minced
  • 2 tbsp lime zest (2 limes)
  • 3 tbsp  olive or avocado oil
  • 1 1⁄2 tsp sea salt 1 tbsp lime juice
  • Fresh cracked pepper to taste
  • Fresh parsley for garnish after cooking

Instructions

  1. Preheat oven to 350 degrees. 
  2. Cut the sweet potato into medium size wedges or stripe. 
  3. Toss them in a sheet pan with oil or seasonings. Spread the fries out evenly on the sheet pan.
  4. Bake on 350 degrees for 20 minutes then rotate the fries. Cook for another 30 – 40 minutes or cook until crisp. Cooking times may vary.

Honey Balsamic Chicken & Veggies

6 Servings

Ingredients

  • 6 small chicken breasts
  • 1/3 cup balsamic vinegar
  • 1/4 cup honey
  • 1 1/2 Tbsp dijon mustard
  • 1 tsp garlic powder
  • 1/2 tsp turmeric ((optional))
  • 1 tsp paprika
  • salt/pepper
  • fresh basil ((optional))
  • veggies of choice

Instructions

  1. Mix all of the ingredients together with the exception of the chicken breasts and veggies.
  2. Place the sauce in a freezer bag and add the chicken breasts.
  3. Refrigerate overnight (or at least 30 minutes before).
  4. Preheat oven to 350 degrees.
  5. Line a baking sheet with foil or parchment paper.
  6. Add the chicken breasts to the baking sheet.
  7. Cut the veggies and add to the sheet pan.
  8. Drizzle the extra sauce over the chicken and veggies.
  9. Bake for about 30 minutes (or until the chicken is fully cooked).
  10. Serve and enjoy, pack up for lunch the next day, or freeze for later!

Notes

Tip: When working with turmeric, it’s best to wash dishes right after using them so that they won’t stain!

10-Minute Avocado Pasta Sauce

4 servings

Ingredients

  • 1 large avocado
  • 1/2 cup spinach leaves
  • 1/4 cup olive oil
  • 1/4 cup unsweetened cashew milk
  • 2 tsp dried basil
  • 1 tsp garlic powder
  • salt/pepper (to taste)

Instructions

  1. Peel and remove the seed from the avocado.
  2. Place all of the ingredients in a blender or food processor and blend until smooth.
  3. Pour the avocado pasta sauce over your choice of pasta.
  4. Serve and enjoy!
